Gilded Peaks

Gilded Peaks is a classic Dian Hong (Yunnan black tea) grown in the Ning'er county of Simao, China. It is specifically distinguished by its "Bi Luo Chun" rolling style, which shapes the leaves into tight, snail-like spirals or pellets.

Key Characteristics

  • Leaf Profile: Picked as one leaf to one bud sets. The dry leaves appear as silky black and gold pellets often covered in fine golden down or "dust".
  • Flavor Profile: This tea is known for its malty sweetness and robust body. Common flavor notes include:
  • Sweet/Rich: Dark chocolate, cocoa, honey, and caramel.
  • Savory: Toasted malt, sweet potato, and hints of oatmeal raisin cookie.
  • Other: Subtle floral fragrance and occasional peppery or mineral undertones.
  • Mouthfeel: Described as full-bodied and smooth, sometimes with a "slick" or creamy texture.

Harvest Variations

The tea's profile changes slightly depending on the season:

  • Spring Harvest: Less "tippy gold" but features a more robust and potent taste.
  • Autumn Harvest: Contains more golden tips and offers a sweeter, more "easy-going" flavor.
  • Aging: Like many Yunnan blacks, it benefits from short-term aging (up to 2 years), which enhances its honey-like mellowness and complexity.

Brewing Recommendations

For the best results, use water heated to approximately 90°C (194°F) to boiling.

  • Gong Fu Style: 5–6 grams per 100ml. Use short steeps (10–30 seconds), increasing time for subsequent infusions.
  • Western Style: 2 grams per 200ml, steeping for 2:30 to 3:30 minutes.
